perfect nachos


Wow! This is my 100th post! It doesn't seem like it's been that many posts, but after a year of blogging I should probably have even more. Oh well.

With our burgers and nachos, this weekend would seem to be filled with "junk" food, but I'd like to think that we do these dishes in a more healthful (and most definitely more delicious) way than your Burger King or your Taco Bell. My parents are to thank for beginning a grand tradition of amazing nachos made at home on the weekend. This is one of those meals that is never exactly the same since I just make them from memory.


Nachos or tacos usually follow a few days behind burgers. One half of the ground bison makes 2 burgers, the other half seasoned taco meat. The meat just gets cooked over medium heat, then coated to taste with lots of chili powder and cumin, plus a little chipotle powder, garlic powder, and salt.

Preheat the oven on low (300-350) and line an oven-safe plate with tortilla chips. Stick with a ceramic plate if possible--we've warped a porcelain plate in the oven before. The best chips are hearty, heavy, coarse corn chips. We usually use local blue corn chips, because the restaurant-style chips I used this time got too soggy from all the toppings.

Dollop warmed refried or black beans (if you like) over the chips, then add some meat and shredded cheese. Warm in the oven right on the plates until the cheese is melted and remove with hot pads. Then comes the fun part--slathering the nachos with lots of whatever toppings you like.

My nachos were topped with homemade salsa (that recipe is for another post!), plain yogurt (in lieu of sour cream), jalapenos, and my "green" guacamole. I originally got the guacamole recipe somewhere that I've since forgotten, but it's easy enough to make from memory. Below is the very non-scientific recipe.


"Green" Guacamole

2-3 soft avocados, mashed
1-2 green onions, sliced into thin rounds
2-4 cloves garlic, finely minced
handful cilantro leaves and stems, roughly chopped
small can diced green chiles, drained
splash of lime juice and pinch of salt, to taste

Combine all ingredients and enjoy!

foodfoodfood pt. 2

Man, I've been slow to post lately. I made it through an overnight trip to an educational conference and 2 nights/1 day of parent/teacher conferences, so I think I'm ready to rejoin the rest of the world now.

Way back on Valentine's Day weekend, my parents visited and we ate at yet another restaurant that's part of the Food Fight group: Bluephies. Their menu is pretty extensive, so it was hard to decide, but here's what we settled on:

Sun-dried Tomato Pasta: curly fettuccine with white wine basil cream sauce, chicken, leeks, and sun-dried tomatoes

The Bluephie: roasted turkey with caramelized onions, roasted red pepper, Dijon aioli, and mozzarella

Black Bean & Smoked Chicken Enchiladas

Dessert Sushi Sampler: Butterfinger Wontons, Dark Chocolate Truffle (by Gail Ambrosius), Vanilla Custard

Dessert Sushi Sampler: Chocolate Chip Cookie Dough Eggroll

I really liked my pasta and Matt enjoyed his sandwich. The enchiladas, which my mom and dad split, were nice, but I prefer the enchiladas at Tex Tubb's Taco Palace (yet another Food Fight place). We had fun trying the unusual (and very rich) desserts, but probably wouldn't get them again. All in all, everything was quite good, and we'd like to go another time. There many more pastas and sandwiches to try, as well as an entire page of desserts to conquer--like the huge slice of red velvet cake that was tempting us last time.

a winter meal

After a few recent unsuccessful meals, I was glad to have made something tonight that we both liked. The chicken was very good, baked with paprika, salt, and pepper, and topped with a sauce of dried cherries, red onion, capers, cumin, honey, and hot peppers. It sounds unusual, but the combination of sweet and spicy, sour and salty was actually quite tasty. The gratin, covered in lots of gruyere cheese, was not so well received by Matt, but I loved the rich, creamy texture and slight licorice flavor from the fennel. Both recipes are from my favorite cookbook, Simply Organic (by Jesse Ziff Cool), a fantastic collection organized by seasonal ingredients.

Ladderax is a British-manufactured mid-century shelving system, named for the metal or wood "ladders" that make up the sides of the shelves. Then a combination of shelves and/or desks and storage units can be attached.

It is gorgeous but quite difficult and expensive to find in the states. I'm afraid that obtaining the shelving for myself will remain a dream for the time being. If you happen to have a tip for where to find Ladderax in the US, I would be very much appreciative.

Ladderax aside, these girls have adorable homes. I'm crazy for the rug in this photo. And the curtains. Chair too. Also, I've had an eye out for a pretty vintage globe like in the Freelancer's photo. I want so much. Sigh.

a productive weekend...

I finally took care of a project that had been waiting around for a few months. I took several of our old t-shirts that didn't fit or that we just don't wear and made them into reusable sacks. They're great because they crumple up to fit in a purse or glovebox, so now we'll always have one on hand when we stop for groceries. Here's how to make them:

Cut the sleeves off the shirt and trim around the collar to make thinnish straps and a deeper hole for the top of the bag.


Turn the shirt inside-out. Line up the seams along the bottom of the shirt and put in a few straight pins. Sew along the bottom, following the existing seam. I used a zig zag stitch for extra durability.



Be sure to backstitch over the ends to make sure they're secure. I also trimmed each corner at an angle like so.


If you like your bag to have square corners, turn it right-side-out and you're done!


I left the corners square on the smaller bags, but for the larger shirts, I preferred to add diagonal corners. If you'd like to do that, just stitch across the bottom corner at an angle you like, backstitching at the beginning and end. Then trim off the extra fabric.


Once I trimmed the first edge, I lined up the two corners and pinned the 2nd edge to match the angle on the 1st edge. Then I stitched and trimmed it in the same way.


And...here's what you get!


Besides making about 10 bags, I also watched "Blade Runner" and discovered a movie I hadn't yet seen starring my favorite mid-century singer/dancer, Gene Kelly.


He's such an athletic and talented dancer. I mean, when the guy's tap dancing in roller skates, how can you help but smile?


I wrapped up my weekend by making some yummy burgers for lunch today: ground bison with red onion, garlic, and rosemary, topped with feta and caramelized shallots. Waffle fries and my favorite, peppermint iced tea, on the side.

what's been cooking

Matt and I are heading to Tokyo on Saturday. That means the next several blog posts will be about Japanese food, hopefully while we're still over there.
